I love making this for my Family! It last us a few days, and if we have company over its filling for everyone! These Recipe's are based off a family of 3 that will last 2-3 days! keep that in Mind!
Ingredients:
2 Tablespoons of Butter
Chicken Breast or Chicken Tenders.
1 Teaspoon- Italian Seasoning- Or season with your Heart
Salt/Pepper
2 1/2 Cups Chicken Broth
1 Tablespoon Olive Oil
2 Cups Jasmine Rice - WASHED
2 Cups Fresh Broccoli Florets
2 cans of Condensed Cream of Chicken Soup. sometimes i only have to use 1.5 of the cans.
For Gluten Free use the Pacific Foods Organic GF canned Cream of Chicken.
1/2 Sour Cream
2 Cups Shredded Cheddar Cheese
Ritz Crackers- 2 Tablespoons of Butter to add to the Crushed Ritz for the topping. Promise you, its going to be Bomb as fuck!
If you are going the Gluten Free Route, Use The Gluten Free Glutino Brand.
Directions: Pre Heat Oven to 350
1: Dice chicken into chunks- In a Decent sized Pot add the Butter, chunks of chicken Italian seasoning, and salt and pepper. Cook the chicken until its Finished! about 5 mins depending on the size!
2: Remove the Chicken once its finished cooking. Keep all the love juices that chicken just made in the pan and add your WASHED rice and Chicken broth. Bring it to a boil then let her simmer down. Cook about 7 mins
3: Add the fresh Broccoli, you might need to add more Chicken broth so don't be shocked if that happens. Put the lid back on DO NOT STUR IN THE BROCCOLI and let it steam while the Rice finishes.
4: remove from the heat!
5: Add in the Cooked chicken again, Condensed soup mix, Sour cream, if u want to add more seasonings, and your cheese! Mix until its all creamy.
6: Crush up the Ritz crackers and add the melted butter, i also add in a little bit of shredded cheese in the topping mix!
7: spread the Mixture in a pan, and sprinkle the Ritz mix on top! Bake for about 15 mins.
