BATTER
1 cup granulated sugar
1/4 salt – I used sea salt chunks.
2 cups of flower – I used all purpose flour - For Gluten free used Almond flower, or Any GF Flour with Xanthium Gum in it.
2 tsp baking powder
2 eggs room temp
1 cup sour cream
1/2 cup olive oil- you can use extra or veggie
1 tsp vanilla extract
2 tsp lemon zest
2 Tbsp Lemon Juice
1 1/2 cup blueberries. – I just dumped them in. I personally like a lot of blueberries
You can get 2 tsp from 1 large lemon!
One lemon should give you 2 Tbsp also!
Glaze
1 cup powdered sugar
1 1/2 tbsp Lemon juice MAKE SURE YOU TASTE IT! THE LEMON JUICE CAN BE EXTREMELY OVERPOWERING!
1/2 tsp Lemon Zest
How to make these bomb ass muffin snack
In one relativity big ass bowl mix sour cream, oil, vanilla, and salt together. Mix with a blender.
I hope you have a dish washer because in another bowl you are going to add the flour and baking powder and mix those together with a whisk or a spoon.
You now will slowly add the flour mixture into the batter and blend it in. DO NOT DUMP THE WHOLE DAMN BOWL OF FLOUR INTO THE OTHER BOWL YOU WILL MAKE THAT SHIT SUPER DENSE.. AINT NO BODY GOT TIME FOR THAT!
Now you will add your 2 tsp of lemon zest and 2 tbsp of lemon juice and mix that in as well. The Blueberry’s you will dump in and FOLD into the mixture.
spray your muffin pans or liners and scoop in to you muffin Pans… I’m not going to tell you how to do that you should already know..
Bake at 400F for 20-23 Mins until brown on top and no batter is sticking to your tooth pick.
NOW THE GLAZE!
In another bowl.. mix powder sugar and lemon zest. SLOWLY mix in the lemon juice VERY SLOWLY!!! and taste it. If its to lemonlastic for you add some Vanilla.
Drizzle over the top and make yourself feel like a bad ass super market baker! BOOM!
Yes! you can even make them into Loafs!
These Muffins are made with Gluten Free Flour
These are with Regular Flour not Gluten Free
